Ingredients

  • 3¾ cups (750g) long grain parboiled rice
  • Vegetable Oil
  • Chicken (whole chicken or chicken drumsticks)
  • 100g cow liver
  • 1 tablespoon Nigerian curry powder (NOT Indian Curry)
  • ½ cup green beans
  • 3 carrots
  • Salt (to taste)
  • 3 onions
  • 3 stock/boullion cubes
  • 1 tablespoon thyme

Instructions

  • Wash the chicken and place it in a pot.
  • Add 1 chopped onion, thyme, 2 stock cubes, and salt to the chicken.
  • Cook the chicken until tender, then set it aside, reserving the stock.
  • Boil the liver with a pinch of salt and 1 chopped onion until cooked.
  • Let the liver cool, then dice it into small cubes.
  • Rinse the rice and parboil it with some chicken stock and curry powder until it is almost cooked but still firm. Set aside.
  • Wash and dice the carrots and green beans into small cubes.
  • Slice the remaining onions.
  • Heat vegetable oil in a large pan, add the sliced onions, and stir for a few seconds.
  • Add the diced carrots and green beans to the pan and stir-fry for 2–3 minutes.
  • Gradually add the parboiled rice to the pan, stirring gently to combine with the vegetables.
  • Add the remaining stock cube and salt to taste.
  • Stir in the diced liver and mix well.
